Driver and Requirement

Answers Dependable Morning Sourdough via the consented Prioritize Morning Sourdough proposal: the Market Street Shop must have sourdough available through the morning peak.

Who is responsible for what?

Description

A fixed minimum sourdough quota is reserved for the Market Street Shop in the first dispatch each morning, ahead of other lines. The quota is reviewed weekly and adjusted to demand.

Evaluation Criteria

  • No sourdough stockout before 11:00 at the Market Street Shop.
  • Reserved-quota waste stays within the normal unsold-waste ratio.

Concerns

If the reserved quota is set too high it raises waste; the weekly review exists to keep that in check.
