Driver and Requirement
Every product in the daily range costs prep time, ingredients, and waste risk inside a fixed morning bake window. Without a limit, each New Product Introduction quietly stretches the Bakehouse thinner. The range needs a WIP limit like any other flow.
Who is responsible for what?
- Head Baker — curates the range and names the swap candidate when a new product comes in.
- Bakery Strategy — decides range bets only within the cap; Mara Holt holds the final range call.
- Bakery Operations — schedules the rollout and the phase-out it replaces.
Description
The standing daily range holds at most twelve products. A New Product Introduction
enters only by replacing an existing product, or explicitly time-boxed as a seasonal
special. The check happens before a range bet is Decided on the
Bakery Strategy Board.
Evaluation Criteria
- The range never exceeds twelve standing products.
- Waste rate and morning bake window hold steady as products rotate.
Modeling note
The agreement anchors exactly there: ::before the Decided column
of the Bakery Strategy Board.
